Garlic Scape Butter

Garlic Scape Butter is a fresh and easy way to brighten up your Summer pastas, chicken, and seafood! This is a wonderful and simple no cook recipe I know you'll love!

Ingredients

Units Scale
  • 1/2 cup (2 sticks) of Unsalted Butter
  • 4 Garlic Scapes
  • 1/3 cup of chopped Fresh Parsley

Instructions

  1. Chop the parsley until you have 1/3 cup and set aside.
  2. Cut the ends from the garlic scapes at the top and at the bottom and slice the scapes very thinly.
  3. Soften (don't melt) the 2 sticks of unsalted butter by placing them in a microwave safe bowl and microwaving only until soft enough to stir with a spoon.
  4. Add the chopped parsley and the chopped garlic scapes to the softened butter and stir well.
  5. The butter can be used right away, but it is better to refrigerate for at least a few hours before using to allow the flavors to develop.

Notes

This butter can be stirred into cooked pasta, used to butter corn on the cob, spooned into baked potatoes, and many other uses. For more ideas, please see the blog post for some great suggestions.

Garlic Scape Butter is best when it has been allowed to refrigerate for a few hours once it is made.

Unsalted butter is best for this recipe because it will not add any additional salt to any dishes you use it with. Get the best quality butter your budget will allow. It will taste better!

You can add other fresh herbs to this butter as well if you want a different flavor profile. I have included ideas for that in the blog post!

This butter can be frozen in an airtight container. Use within two weeks to avoid freezer burn and the risk of the butter absorbing any odors or flavors from your freezer.

If you want a stronger garlic scape flavor in your butter, feel free to cut back a bit on the parsley and add one or more additional garlic scapes to the butter for a more intense flavor.

For a spicier flavor profile, try adding some chopped jalapeno, serrano, or other chilis you love.

This recipe is very easy to double or make in a large quantity.

You can try using vegan butter for this recipe if you prefer.
