Ingredients
For the Air Fried Goat Cheese
- 6 1/2 inch slices Goat Cheese
- 1/4 cup All Purpose Flour
- 1 Large Egg, Beaten
- 1/3 cup Panko Bread Crumbs
- 1/4 cup Olive Oil
- 1/4 tsp Salt
- 1/8 tsp Pepper
For the Salad
- 4 cups Baby Greens (Chard, Spinach, or Kale)
- 1/2 recipe of Air Fryer Delicata Squash
- 1 cup Dried Cranberries
- 1 cup Grated or Julienned Carrot
- 1 cup Hazelnut halves
For the Dressing
- 1/4 cup Olive oil
- 4 Tbsp Orange Juice OR Blood Orange Juice
- 1 tbsp Champagne Vinegar
- 1 Clove Garlic, Crushed
- 1 Tbsp Honey
- 1 Tbsp Fresh Thyme
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Place flour, egg, and panko in three bowls for dredging.
- Slice goat cheese into 1/2 inch thick slices.
- Add 1/4 tsp salt and 1/8 tsp pepper to panko.
- Dip each goat cheese slice into flour, then egg, then panko.
- H๏ปฟeat your Air Fryer to 370 Degrees.
- After cheese is dredged, place in the preheated air fryer and drizzle with oil or use an oil spray.
- A๏ปฟir Fry for about 4 to 5 minutes, turn the goat cheese medallions over, and drizzle or spray with more oil.
- A๏ปฟir fry for another 4 to 5 minutes until they are golden on both sides. Set aside and prepare the rest of the salad.
- Place the 4 cups of baby greens in a large bowl along with the 1 cup each of hazelnuts, grated carrot, dried cranberries, and 1/2 recipe of Air Fryer Delicata Squash to the bowl and toss to combine.
- In another bowl, place olive oil, orange juice or blood orange juice, champagne vinegar, salt, pepper, garlic, honey, and fresh thyme and emulsify using a stick blender. Toss with greens and plate the salad, topping with fried goat cheese slices and serve.

T๏ปฟhere are many other vegetables you can use in this salad, let your imagination run wild!
Either Blood Orange Juice or regular Orange Juice can be used in the dressing.
P๏ปฟan Frying Instructions
I๏ปฟf you don't have an air fryer, dredge the goat cheese exactly as directed, and heat a 12 inch non stick skillet on medium high heat, add the oil and the goat cheese slices. You"ll want to cook them for about 3 minutes on each side or until golden.
