Ingredients
- 1/2 of a medium sized Yellow Onion (about 1/3 cup chopped)
- 1 large Jalapeno (or 2 smaller jalapenos)
- 4 large Garlic cloves
- 1 1/2 pounds of Ground Chicken
- 2 tsp of Salt
- 1/4 tsp of Pepper
- 1/2 tsp of Ancho Chili Powder
- 1/4 cup of Avocado Oil
Instructions
- Heat a large non stick skillet on medium high heat. Dice the jalapeno, the 1/2 an onion, and the 4 cloves of garlic.
- Add 1 Tbsp of the avocado oil to the skillet. Add the chopped onion, jalapeno, and garlic to the pan.
- While the vegetables cook, put the 1 1/2 pound of ground chicken in a bowl. Add the 2 tsp of salt, 1/4 tsp of pepper, and 1/2 tsp of Ancho chili powder to the meat and gently stir the spices in.
- Continue to saute the onion mixture until the onions are caramelized and the jalapeno has softened, about 10 minutes or a little longer. When the veggies are cooked, remove them from the heat and give them a few minutes to cool.
- Once cooled, add the veggies to the bowl of ground chicken and gently stir them in.
- Heat a large skillet on medium high heat (you can use the same pan that you used for the veggies if it is large enough).
- While the pan heats, form the ground chicken mixture into four patties.
- Add the remaining 3 Tbsp of oil to the skillet (I know this seems like a lot of oil but it adds some fat and keeps the burgers from sticking).
- Cook the burgers for about 5 minutes on each side, or until they reach an internal temperature of 165 degrees. Use a meat thermometer to determine doneness.
- If you are adding cheese, place the cheese slices on top of the burgers after you turn them over.
- Serve on your favorite bun, with your favorite toppings and sides and enjoy!
Notes
If you want to use poblanos instead of jalapeno, about one half of a small poblano chopped should be enough.
If you want to try serranos instead of jalapeno, use two serrano chilis. They are smaller so you will need more. Be aware that this will also add more heat.
The onion mixture can be cooked a day ahead of time and refrigerated and stirred into the ground chicken when you are ready to cook the burgers.
Your burger patties can be made a day or two ahead and refrigerated until ready to cook. This can be a real time saver!
