Spicy Chicken Burgers- If you love a good burger, have I got a recipe for you! These are a fresh take on a typical burger, and a great alternative to the usual beef. In this post, I will show you how to make the best ground chicken burgers with a little bit of heat and spice that you will make over and over again!

Spicy Chicken Burger

These spicy burgers are loaded with fresh flavors! Sauteed onion, garlic, and jalapeno are added right into the meat, putting flavor into every bite while adding a little heat too. That is what makes this spicy burger unique, it’s more than just using a spice rub or blend to add heat. The veggies add a whole extra layer of flavor and spice!

I don’t think chicken burgers get enough respect, and that’s why I decided to add this recipe to the website! I love making these in the Spring and Summer when the weather warms up.

I love a good chicken (or turkey) burger, but they don’t have as much flavor on their own as a beef burger does. That being said, this does mean that you have a blank canvas so to speak, and you can create all sorts of flavor profiles. Chicken plays really well with spices.

Ingredients You’ll Need for These Chicken Burgers

Ground Chicken- You can buy this already ground, or grind your own if you have the capability.

Jalapeno- You can leave the seeds in or remove them depending on how much heat you want.

Onion- Be sure to use a variety of yellow onion, they have great flavor when caramelized.

Garlic- Fresh garlic really adds something special to these burgers!

Seasonings- Please head down to the recipe card for info on what you’ll need.

Avocado Oil- The oil is pretty crucial here, because the chicken on its own does not have much fat. This not only adds in a little fat, but helps with the cooking process.

How To Make A Spicy Chicken Burger

This recipe is really easy, and the patties can even be made ahead (see the notes in the recipe card for more info).

  1. Chop and saute the onion, garlic, and jalapeno.
  2. Season the ground chicken.
  3. Add the onion and jalapeno mixture to the meat.
  4. Form into patties and cook.

Unlike a beef burger, you do need oil for these. Ground chicken is quite lean, and without it not only will your burgers be a bit on the dry side, but they will likely stick to your pan. 

I like to cook these in a skillet versus the grill because I can add oil. When grilling, the oil tends to just run in between the grates and not be much help to you. If you have grilled chicken burgers and want to give these a try on the grill, by all means go for it!

In addition to the oil, the sauteed veggies also add a little bit of moisture to the meat.

It’s important to note that unlike a beef burger, you want to cook these well done. I know that may seem like you’re going against your instincts (especially if you like your burgers on the rare side) but in the interest of food safety, chicken needs to be thoroughly cooked. 

I’ve got notes on this in the recipe card so you’ll know how to tell if your burgers are done. You will need a meat thermometer. As a professional cook, I do this every day and I can assure you it does not take long and is worth the extra few seconds it takes!

Recipe Variations

If you’d like to change these up a bit, here are a few ideas I think you’ll love:

  • Try chipotle chili powder as a seasoning.
  • If you want more heat, you can use serrano peppers instead of jalapenos.
  • For less heat, try poblano chili (I have notes in the recipe card for this option).
  • Shallot instead of onion.

What To Serve With Your Spicy Chicken Burgers

These are great when the weather is warm, and you want something a little less heavy. The pairings listed above are all ideal for those same reasons.

I like this with some melted cheddar or pepperjack cheese, peppery arugula, fresh tomato, and banana pepper rings or sliced pepperoncini.

If you have any leftover burgers, they will keep in the refrigerator for up to four days.

Spicy Chicken Burgers

These easy Spicy Chicken Burgers have sauteed veggies mixed right into the meat for extra flavor and heat. They are a great beef burger alternative and the perfect light meal on a warm day!

Ingredients

  • 1/2 of a medium sized Yellow Onion (about 1/3 cup chopped)
  • 1 large Jalapeno (or 2 smaller jalapenos)
  • 4 large Garlic cloves
  • 1 1/2 pounds of Ground Chicken
  • 2 tsp of Salt
  • 1/4 tsp of Pepper
  • 1/2 tsp of Ancho Chili Powder
  • 1/4 cup of Avocado Oil

Instructions

  1. Heat a large non stick skillet on medium high heat. Dice the jalapeno, the 1/2 an onion, and the 4 cloves of garlic.
  2. Add 1 Tbsp of the avocado oil to the skillet. Add the chopped onion, jalapeno, and garlic to the pan.
  3. While the vegetables cook, put the 1 1/2 pound of ground chicken in a bowl. Add the 2 tsp of salt, 1/4 tsp of pepper, and 1/2 tsp of Ancho chili powder to the meat and gently stir the spices in.
  4. Continue to saute the onion mixture until the onions are caramelized and the jalapeno has softened, about 10 minutes or a little longer. When the veggies are cooked, remove them from the heat and give them a few minutes to cool.
  5. Once cooled, add the veggies to the bowl of ground chicken and gently stir them in.
  6. Heat a large skillet on medium high heat (you can use the same pan that you used for the veggies if it is large enough).
  7. While the pan heats, form the ground chicken mixture into four patties.
  8. Add the remaining 3 Tbsp of oil to the skillet (I know this seems like a lot of oil but it adds some fat and keeps the burgers from sticking).
  9. Cook the burgers for about 5 minutes on each side, or until they reach an internal temperature of 165 degrees. Use a meat thermometer to determine doneness.
  10. If you are adding cheese, place the cheese slices on top of the burgers after you turn them over.
  11. Serve on your favorite bun, with your favorite toppings and sides and enjoy!

Notes

If you want to use poblanos instead of jalapeno, about one half of a small poblano chopped should be enough.

If you want to try serranos instead of jalapeno, use two serrano chilis. They are smaller so you will need more. Be aware that this will also add more heat.

The onion mixture can be cooked a day ahead of time and refrigerated and stirred into the ground chicken when you are ready to cook the burgers.

Your burger patties can be made a day or two ahead and refrigerated until ready to cook. This can be a real time saver!
