What Youโ€™ll Need For A Lovely Strawberry Balsamic Dressing

This dressing is made with simple ingredients you probably already have on hand. Donโ€™t worry, I’ll be revealing that surprise ingredient I mentioned earlier right here!

Fresh Strawberries

You donโ€™t need very many strawberries for this recipe, and this dressing is a great way to use strawberries that are starting to go soft but have not yet started to spoil.

Balsamic Vinegar

This vinegar is one of my favorites. I even love using it in tomato sauce! Don’t worry about using the fancy expensive kind for this recipe!

Honey

Honey binds the dressing and helps offset the tartness of the balsamic vinegar. A neutral flavored honey is best, such as wildflower or fireweed.

Chive flowers

These little lovelies right here are the secret ingredient I was talking about! They taste just like a chive, and the flavor adds a nice bite without having a strong flavor of onion.

An immersion blender is definitely the best way to make this dressing. They are a really useful kitchen tool to have around!

The honey and the strawberries donโ€™t need to cook in the saucepan for long, but warming the honey and softening the strawberries really helps the vinaigrette come together, donโ€™t skip this step!

Use the chive flowers if you can find them! They give the dressing a slightly savory note that balances the strawberryโ€™s sweetness.

Strawberry Balsamic Salad Dressing

Strawberries aren’t just for dessert! This strawberry and white balsamic vinaigrette is great on savory salads as well as fruit salads, with beautiful flavor notes from edible flowers.

Ingredients

Units Scale
  • 1/4 cup Avocado or Sunflower Seed Oil
  • 1/4 cup Balsamic Vinegar
  • 3 to 4 Strawberries (Medium to Large size)
  • 2 Tbsp Honey
  • Pinch of Salt (around 1/8 to 1/4 teaspoon)
  • 46 Chive Flowers

Instructions

  1. Chop the 3 to 4 strawberries. place in a small saucepan with the 2 Tablespoons of honey and heat over medium low heat until the strawberries are soft and the honey has liquified a bit, about 3 to 5 minutes.
  2. In a tall mason jar, medium sized mixing bowl, or large glass measuring cup combine the 1/4 cup of oil, the 1/4 cup of balsamic vinegar, the pinch of salt, and 4-6 chive flowers. Add the strawberries and honey.
  3. Using an immersion blender (or standard blender), puree until all dressing ingredients are combined. Now you can enjoy this easy vinaigrette!

Notes

Fresh chives can be used if you don’t have or can’t find chive flowers. You won’t need much, maybe a couple of teaspoons of chopped chive. they have a stronger flavor than the flowers so you will want to go easy.

This will keep in your refrigerator in a jar with a well fitting lid for about a week. It’s great on all types of salads!
